
Pizzelle Heaven
Traditional Italian waffle cookies - light, crispy, and delicious with anise flavor.

- 6 eggs
- 1 1/2 cups sugar
- 1 cup butter, melted and cooled
- 2 tablespoons anise extract (or vanilla extract)
- 3 1/2 cups all-purpose flour
- 4 teaspoons baking powder

In a large bowl, beat eggs and sugar together until light and fluffy.

Add the melted butter and anise extract, mixing well.

In a separate bowl, whisk together flour and baking powder.

Gradually add the dry ingredients to the wet mixture, stirring until smooth. The batter should be thick but spoonable.

Preheat your pizzelle iron according to manufacturer's instructions.

Drop about 1 tablespoon of batter onto each pizzelle pattern on the iron.

Close the iron and cook for about 30-45 seconds, or until steam stops coming out and pizzelle are golden brown.

Carefully remove pizzelle with a fork and place on a wire rack to cool and crisp up.

Continue with remaining batter. Pizzelle will crisp as they cool.
