Blueberry Delight
Slice of happiness - a creamy blueberry cake with sour cream topping.

- For the cake base:
- 1 1/2 cups of all-purpose flour
- 1/2 cup white sugar
- 1 1/2 teaspoons baking powder
- 1/2 cup butter, softened
- 1 egg
- 1 teaspoon vanilla extract
- For the Blueberry Layer:
- 4 cups of blueberries
- For the Cream topping:
- 2 cups sour cream
- 1/2 cup white sugar
- 2 egg yolks
- 1 teaspoon vanilla extract

Preheat oven to 350 F

Grease 9 inch springform pan or baking dish
Make cake base:

a. In a mixing bowl, whisk flour + sugar + baking powder

b. Cut in softened butter until it becomes crumbly

c. Add egg + vanilla extract until you get a soft dough texture

d. Press dough evenly into bottom of the baking pan
Blueberry layer: Add blueberries over the cake base
Cream topping: In a medium bowl, whisk Sour Cream + sugar + egg yolks + vanilla extract until smooth. Then pour the cream mixture over the berries

Bake for 50-55 min until topping is set and lightly golden. Cake should cool before slicing.
